Asian Ginger Bacon-Wrapped Venison Tenderloin

Lean venison turns into a true occasion meal when it is wrapped in bacon, kissed with Asian Zing garlic, and cooked just to a rosy center. A quick honey-ginger finish adds balance to the savory smoke, making this a beautiful way to turn a hunter’s favorite cut into a restaurant-worthy plate.
Total Time 50 minutes

Method

  1. Pat tenderloin dry. Rub with Asian Zing Garlic, Original Garlic, salt, pepper, and thyme. Wrap bacon around the tenderloin, overlapping slightly, and secure with kitchen twine or toothpicks.
  2. Sear in hot oil in an oven-safe skillet until bacon is golden on all sides. Transfer skillet to a 400°F oven and cook until the center reaches 130°F for medium-rare, about 12 to 18 minutes.
  3. Rest 10 minutes. Brush with Honey Ginger Balsamic, slice into medallions, and serve immediately.

Notes

Time: 50 min
Kitchen tip: Venison is best when it stays rosy. Pull it a little early because the temperature will rise while it rests.
