Cedar-Plank Lemon Tilapia

A cedar plank does the heavy lifting here: it perfumes the fish, keeps it gently moist and makes a simple tilapia dinner feel like it belongs at a backyard supper club. Bright lemon, herbaceous garlic and a tiny balsamic finish make every flaky bite pop.

Method

  1. Heat a grill for medium-high indirect heat. Place the soaked cedar plank directly over the heat with the lid closed for 3 to 5 minutes, just until it begins to crackle and smell toasty.
  2. Brush tilapia with Ellbee's Garlic Olive Oil and season with Ellbee's Lemon Zest Gourmet Garlic, salt and pepper. Lay fillets on the hot plank and top each with a lemon slice.
  3. Set plank over indirect heat, close the lid and cook until fish flakes easily, 10 to 14 minutes. Toss asparagus with a little oil, salt and pepper and grill alongside until charred-tender.
  4. Transfer fish and asparagus to plates. Drizzle lightly with Ellbee's Peach White Balsamic Vinegar and finish with parsley and fresh lemon.

Notes

Time: 35 min
Kitchen tip: Keep the grill lid closed as much as possible—the trapped cedar smoke is part of the flavor, not just the show.
