Ellbee’s Garlic Kitchen Box

Good-to-Gourmet Seven-Layer Salad

All the nostalgia of the glass-bowl classic, with a fresher, more flavor-forward finish. Crisp lettuce, cauliflower, tomatoes, peas, bacon and cheddar get layered under a creamy Tuscan dressing that turns this into the first salad people actually ask for seconds of.
Total Time 25 minutes
Servings: 12 servings
Course: Soups & Salads

Ingredients

  • 1 large head romaine lettuce, finely chopped
  • 1 small head cauliflower, finely chopped
  • 2 cups halved cherry tomatoes
  • 0.5 large red onion, finely diced
  • 1.5 cups frozen peas, thawed
  • 8 slices thick-cut bacon, cooked crisp and crumbled
  • 1 cup shredded sharp cheddar
  • 0.75 cup good mayonnaise
  • 0.25 cup plain Greek yogurt
  • 1 tablespoon Ellbee's Rosemary Olive Oil
  • 2 tablespoons Ellbee's Champagne Balsamic Vinegar
  • 2 teaspoons Ellbee's Tuscan Gourmet Garlic
  • 1 teaspoon Dijon mustard
  • kosher salt and cracked black pepper, to taste

Method

  1. In a small bowl, whisk mayonnaise, Greek yogurt, Ellbee's Rosemary Olive Oil, Ellbee's Champagne Balsamic Vinegar, Ellbee's Tuscan Gourmet Garlic and Dijon. Season with salt and pepper; it should be creamy, tangy and bright.
  2. Layer the romaine, cauliflower, tomatoes, onion, peas, bacon and cheddar in a large clear serving bowl. Spread the dressing all the way to the edge so it acts like a flavorful seal.
  3. Cover and chill for at least two hours, or overnight. Toss just before serving so every layer gets a little of everything.

Notes

Time: 25 min
Kitchen tip: Keep the bacon separate until just before serving if you want the crunch at its absolute best.
