Ingredients
Method
- Set smoker for 325°F. Soak oats in milk for 5 minutes. Gently mix beef, oat mixture, eggs, onion, Ellbee's Original Gourmet Garlic, Ellbee's Bacon Organic Olive Oil, 1/4 cup ketchup, chives, salt and pepper until just combined.
- Shape mixture into one free-form loaf on a parchment-lined sheet pan or smoker-safe rack. Smoke until the center reaches 155°F, about 60 to 75 minutes.
- Stir remaining ketchup with Ellbee's Bourbon Balsamic Vinegar. Brush the loaf with glaze during its final 15 minutes, letting it set into a lacquered crust.
- Rest 10 minutes before slicing. Serve with roasted green beans and mashed potatoes.
Notes
Time: 100 min
Kitchen tip: Mix meatloaf only until the ingredients are combined. Working it too much is the fastest route to a dense, springy loaf.
