Ingredients
Method
- Heat smoker to 250°F. Mix mustard, Ellbee's Asian Zing Gourmet Garlic, Ellbee's Zesty Gourmet Garlic, brown sugar, salt and pepper. Rub all over both sides of the ribs.
- Smoke ribs bone-side down until the meat has pulled back from the bones and the racks bend easily, about 3 hours. Wrap in foil for the final hour if you want a softer, more tender finish.
- Stir barbecue sauce, Ellbee's Bourbon Balsamic Vinegar and apple cider vinegar together. Unwrap ribs, brush generously with sauce and return them to the smoker, uncovered, until lacquered, 15 to 20 minutes.
- Rest ribs 10 minutes, slice between bones and serve with extra sauce on the side.
Notes
Time: 240 min
Kitchen tip: Ribs are done when the rack bends deeply when lifted at the center and the meat between bones feels tender—not when a single timer says so.
