Ingredients
Method
- Prepare a grill for indirect medium heat, about 375°F. Mix Ellbee's Bacon Organic Olive Oil, Ellbee's Zesty Gourmet Garlic, Ellbee's Peach White Balsamic Vinegar, salt and pepper. Rub all over the chicken and under the breast skin where you can reach.
- Tuck lemon, onion and thyme into the cavity. Toss potatoes with a little extra oil, salt and pepper, then arrange them in a grill-safe pan beside the chicken.
- Set chicken breast-side up over indirect heat, close the lid and grill until the thickest part of the thigh reaches 165°F, 60 to 75 minutes. Rotate once if one side of the grill runs hotter.
- Move chicken over direct heat for 2 to 3 minutes if the skin needs extra crispness. Rest 15 minutes, carve, and serve with the roasted potatoes and pan juices.
