Zesty Roasted Red Pepper Hummus

Creamy, smoky and absolutely swipe-worthy, this hummus brings the spark. Zesty Gourmet Garlic, roasted red pepper, a whisper of Champagne Balsamic and a golden olive-oil swirl make every scoop feel like the good dip at the party.
Total Time 10 minutes
Servings: 6 servings
Course: Appetizers

Ingredients

  • 2 15-ounce cans chickpeas, rinsed and drained
  • 1 cup roasted red peppers, drained
  • 0.25 cup tahini
  • 0.25 cup fresh lemon juice
  • 3 tablespoons Garlic Olive Oil, plus more to finish
  • 1 tablespoon Champagne Balsamic Vinegar
  • 2 teaspoons Zesty Gourmet Garlic
  • 0.5 cup ice water, plus more as needed
  • smoked paprika, salt and parsley, to finish

Method

  1. Add chickpeas, roasted red pepper, tahini, lemon juice, Garlic Olive Oil, Champagne Balsamic and Zesty Gourmet Garlic to a food processor. Blend until everything comes together.
  2. With the motor running, stream in the ice water until the hummus is plush, light and completely smooth. Taste, then add salt or another splash of lemon if it needs a little wake-up call.
  3. Swipe into a shallow bowl, make a few swoops with the back of a spoon and fill them with olive oil. Finish with smoked paprika, parsley and toasted chickpeas.

Notes

Time: 10 min
Kitchen tip: A little ice water is the restaurant trick: it makes hummus dramatically silkier without adding extra oil.
