Asian Zing Chicken, Rice & Garden Bean Skillet
This bright, savory skillet takes the practical chicken-and-rice casserole from the original cookbook and gives it a weeknight glow-up. Golden chicken, tender rice, green beans, and sweet corn all cook together under a lively Asian Zing finish, so dinner lands on the table with almost no cleanup and plenty of color.
Ingredients
Method
- Warm Basil Olive Oil in a wide, lidded skillet over medium-high heat. Season chicken with Asian Zing Garlic, Chili Lime Garlic, salt, and pepper, then sear until browned on the edges, about 5 minutes.
- Stir in rice, broth, green beans, and corn. Bring to a gentle simmer, cover, reduce heat to low, and cook 18 to 20 minutes, until rice is tender and the chicken reaches 165°F.
- Rest covered for 5 minutes, then fluff the rice. Finish with parsley and a squeeze of lemon at the table.
Notes
Time: 35 min
Kitchen tip: Keep the simmer gentle after covering. That is the secret to tender rice instead of a scorched bottom.
