Zesty Beer-Can Chicken
A whole chicken roasted upright over a little steam turns out incredibly juicy under a deeply bronzed, zesty-garlic skin. Sweet & Smoky garlic adds a barbecue note, and the result is a low-effort centerpiece that pulls apart beautifully for dinner, sandwiches and tomorrow’s chicken salad.
Ingredients
Method
- Heat grill for indirect medium heat, about 375°F. Rub chicken all over with Ellbee's Rosemary Olive Oil, Ellbee's Zesty Gourmet Garlic, Ellbee's Sweet & Smoky Gourmet Garlic, salt and pepper. Let stand 20 minutes.
- Set chicken upright on a sturdy beer-can chicken rack with the half-full can inside the cavity. Arrange onion, potatoes, lemon and rosemary around the rack.
- Grill over indirect heat with the lid closed until the thickest part of the thigh reaches 165°F, 70 to 85 minutes.
- Rest 15 minutes before carving. Spoon the pan juices over the chicken and potatoes.
Notes
Time: 100 min
Kitchen tip: If a beer-can rack is not your thing, roast the chicken over a vertical poultry roaster or simply roast it on a rack at 400°F until done.
