Tuscan Smothered Pork Chops
Golden pork chops disappear under a tomato-rich skillet sauce loaded with peppers, onions and celery. Tuscan garlic and a tomato-basil balsamic finish make it saucy enough to spoon over potatoes, and just bright enough to justify a piece of bread for the last drop.
Ingredients
Method
- Season pork with Ellbee's Tuscan Gourmet Garlic, salt and pepper. Heat Ellbee's Chef's Blend Extra Virgin Olive Oil in a deep skillet over medium-high heat and brown chops on both sides; transfer to a plate.
- Add bell pepper, onion and celery to the skillet. Cook until softened, scraping up the browned bits, then add tomatoes, stock and Ellbee's Tomato Basil Balsamic Vinegar.
- Return chops and any juices to the sauce. Cover partially and simmer gently until the pork is tender and reaches 145°F, 20 to 25 minutes.
- Spoon the vegetables and sauce over pork chops, scatter parsley on top and serve with potatoes, polenta or crusty bread.
Notes
Time: 55 min
Kitchen tip: Give the chops space when browning. Work in batches if needed so they sear instead of steaming.
