Sweet-Smoky Pineapple Pork Roast
Pineapple and pork were meant to meet a sweet-smoky garlic glaze. This slow roast comes out sliceable, glossy and full of just enough heat to keep the fruit from feeling too sweet—then the leftovers become incredible sandwiches the next day.
Ingredients
Method
- Heat oven to 325°F. Rub pork all over with Ellbee's Habanero Olive Oil, Ellbee's Sweet & Smoky Gourmet Garlic, salt and pepper. Set in a Dutch oven or deep roasting pan with onion and pineapple around it.
- Whisk pineapple juice, Ellbee's Bourbon Balsamic Vinegar and stock; pour around, not over, the pork. Cover tightly and roast until fork-tender, 2 1/2 to 3 hours.
- Transfer pork to a board. Simmer pan juices on the stove until slightly syrupy, mashing a few pineapple pieces into the sauce for body.
- Slice pork, spoon the pineapple sauce over the top and finish with cilantro. Serve with rice, roasted vegetables or tucked into sandwiches.
Notes
Time: 210 min
Kitchen tip: For a browned, sticky exterior, uncover the roast for its final 20 minutes and baste once with the reduced pan juices.
