Tuscan Mahi Mahi & Green Beans
Clean, buttery mahi mahi gets a full Tuscan dinner treatment here: a lemony herb crust, silky pan sauce, bright green beans and a little pile of garlic mash to catch every drop. It is easy enough for a weeknight but photographs like date night.
Ingredients
Method
- Season mahi mahi with Ellbee's Tuscan Gourmet Garlic, salt and pepper. Heat 1 tablespoon Ellbee's Basil Olive Oil in a skillet over medium-high heat and sear fish until golden and opaque at the center, 3 to 4 minutes per side. Transfer to a plate.
- Add wine and stock to the same skillet. Simmer until reduced by about one-third, then stir in Ellbee's Champagne Balsamic Vinegar and squeeze in a little lemon juice.
- Meanwhile, toss green beans with remaining Basil Olive Oil, salt and pepper. Sauté or roast until crisp-tender and blistered.
- Spoon mashed potatoes onto plates, set the fish alongside green beans and finish with the lemon pan sauce and parsley.
Notes
Time: 40 min
Kitchen tip: Use a thin fish spatula and wait until the fillet releases naturally before turning. That is the secret to a clean golden crust.
