Zesty Salmon & Shrimp Skewers
A little surf, a little turf of the sea, and a lot of color. Zesty garlic wakes up rich salmon and sweet shrimp, while a quick champagne-balsamic citrus drizzle keeps the skewers bright enough for a platter that disappears before the grill cools down.
Ingredients
Method
- Soak wooden skewers for 20 minutes if using. Toss salmon, shrimp and peppers with 1 tablespoon Ellbee's Basil Olive Oil, Ellbee's Zesty Gourmet Garlic, salt and pepper. Thread onto skewers, alternating seafood and pepper.
- Heat grill to medium-high. Grill skewers, turning carefully once, until shrimp are pink and salmon flakes at the center, 3 to 4 minutes per side.
- Whisk remaining Basil Olive Oil, lime juice, lime zest, Ellbee's Champagne Balsamic Vinegar and herbs together.
- Drizzle over hot skewers and serve immediately with extra lime wedges.
Notes
Time: 30 min
Kitchen tip: Keep salmon and shrimp pieces similarly sized so both cook through at nearly the same moment.
