Chipotle-Chili Lime Onion Rings
A tall stack of hot, crisp onion rings deserves a sauce with some attitude. Chipotle and chili-lime garlic turn the cool sour-cream dip smoky, tangy and bright, making this classic pub snack feel right at home on a Good to Gourmet table.
Ingredients
Method
- Whisk sour cream, Ellbee's Chipotle Herb Gourmet Garlic, Ellbee's Chili Lime Gourmet Garlic, Ellbee's Habanero Olive Oil, salt and pepper together. Refrigerate while you fry the onion rings.
- Heat 2 inches of neutral oil to 350°F. Whisk 3/4 cup flour, baking powder and beer or sparkling water into a thin batter. Put remaining flour and panko in separate shallow bowls.
- Dredge onion rings in flour, dip in batter, then coat with panko. Fry in small batches until deep golden and crisp, 2 to 3 minutes per side.
- Drain on a rack, season immediately with salt and serve hot with the smoky chili-lime dip.
Notes
Time: 45 min
Kitchen tip: Keep fried rings warm on a rack in a 200°F oven instead of piling them on a plate, which traps steam and softens the crust.
