Grilled Romaine with Parmesan Garlic Dressing
A few minutes on the grill makes romaine smoky at the edges and still cool and crisp in the center. That contrast is magic with a tangy Parmesan-garlic dressing, grilled lemon and crunchy croutons—an easy steakhouse-style salad built for your own backyard.
Ingredients
Method
- Heat grill to high. Brush cut sides of romaine with Ellbee's Garlic Olive Oil and season lightly with salt and pepper.
- Whisk Greek yogurt, grated Parmesan, Ellbee's Lemon Zest Gourmet Garlic, Ellbee's Asian Zing Gourmet Garlic and a squeeze of lemon together. Thin with a teaspoon of water if needed.
- Grill romaine cut-side down for 2 to 3 minutes until marked but still crisp. Grill lemon halves alongside it until charred.
- Arrange warm romaine on a platter, drizzle with dressing and finish with croutons, Parmesan shavings, pepper and grilled lemon.
Notes
Time: 25 min
Kitchen tip: Keep the grill hot and quick. You are chasing smoky char on the outside, not wilted lettuce all the way through.
